This Blueberry Vegan Ice Cream has only bananas, blueberries, coconut milk, vanilla extract, and almond extract.  All you need is a blender and 5 minutes to make this creamy, sweet, sugar free, ice cream.

Ingredients
  

  • 3 frozen bananas
  • 1 cup frozen blueberries
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 2 TBS almond milk (optional)

Instructions
 

  • Break frozen bananas in half to prevent frozen chunks from not blending.
  • Add bananas, blueberries, and extracts to the blender.  Blend for 1-2 minutes, or until smooth and creamy.  Add almond milk for a creamier texture.  
  • scoop into a glass container and eat right away,  or freeze until later.  Enjoy!
