So, I started the Whole 30. I also started a wicked awesome book, Smoke Gets In Your Eyes, by Caitlin Doughty. Why do these two things matter? Well, let me explain. I was all excited to receive this book in the mail from a life long/ childhood friend who I lovingly call Sloth. Her and I have always loved morbid, dark things. She sent me this book knowing damn well I would be totally obsessed, and she was right. The book brings up a conversation about normalizing death within our society, and better, more eco friendly endings. I never knew I was so uncomfortable facing my own mortality. I know you are reading this for a recipe for ice cream and wondering why this should matter…
The Whole 30 “diet” is great. I love certain aspects of it. I love the idea of excluding all inflammatory foods to see how your body functions. Really, I started it to curb my wicked sugar addiction. Then, I read this book. Tomorrow is not promised, folks. We all know this. However, this book really had me shook. In this life, all I want is health, happiness, and wanderlust. The rest can take a back seat. That also goes for dieting. While I found value in this specific diet, I realized I can have my cake and eat it, too… figuratively since dairy and gluten is out the window.
In the Whole 30 diet, desserts are not allowed. The point of the 30 days of depression no dessert is to regain perspective and evolve your relationship with food. But, then there was this book reminding me of my own morality and the ending of it, which is unknown. Yep, that’s all it took for me to figure out that I wanted a dessert. It may not be full on ice cream, but this Blueberry Vegan Ice Cream is just as rich, creamy, and sweet.
No, this Blueberry Vegan Ice Cream is not Whole 30 compliant. What this ice cream is though is filling, healthy, happy, ice cold, and damn delicious! I am still upholding my goal of zero processed sugars for the month, since this sweet treat has ZERO added sugar!

- Grab yourself a blender.
- Toss all the ingredients into the blender.

Blueberry Vegan Ice cream
This Blueberry Vegan Ice Cream has only bananas, blueberries, coconut milk, vanilla extract, and almond extract. All you need is a blender and 5 minutes to make this creamy, sweet, sugar free, ice cream.
Ingredients
- 3 frozen bananas
- 1 cup frozen blueberries
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 2 TBS almond milk (optional)
Instructions

Break frozen bananas in half to prevent frozen chunks from not blending.

Add bananas, blueberries, and extracts to the blender. Blend for 1-2 minutes, or until smooth and creamy. Add almond milk for a creamier texture.

scoop into a glass container and eat right away, or freeze until later. Enjoy!
