Chef’s Tips

  • Perfectly Cooked Eggs: Follow the boiling and cooling method in the notes to ensure easy peeling and perfectly cooked eggs every time.
  • Ripe Avocados: Use ripe but firm avocados for the creamiest texture. A ripe avocado will give slightly when gently pressed.
  • Presentation: Use a pastry bag or zip-top bag with the corner snipped to neatly pipe the avocado mixture into the egg whites.
  • Make Ahead: Prepare the filling in advance and store it in an airtight container. Assemble the deviled eggs just before serving for maximum freshness.

Ingredients

simple ingredients for avocado deviled eggs on a table such as avocados, eggs, oil and garnish
  • 6 large eggs
A great source of protein and the base for the deviled eggs. Use fresh, high-quality eggs for the best results.
  • 2 ripe avocados
These add creaminess and healthy fats to the filling. Hass avocados are ideal for their buttery texture.
  • 1 tablespoon lime juice
Lime juice adds a tangy brightness and prevents the avocado from browning.
  • ยผ tsp smoked paprika
This smoky spice enhances the flavor and provides a subtle depth to the filling. Regular paprika works as a milder alternative.
  • Cilantro, finely chopped
Fresh cilantro adds a burst of flavor and a pop of color. Substitute with parsley if you prefer.

Substitutions

  • Egg-Free Option: Replace eggs with halved mini bell peppers for a creative low-carb appetizer.
  • Cilantro Swap: If youโ€™re not a fan of cilantro, try parsley, chives, or green onions.
  • Spice Variations: Add a pinch of cayenne pepper or a dash of hot sauce for a spicier version.

  1. Cook the Eggs
Place the eggs in a medium pot and fill halfway with water. Bring to a boil over high heat, then reduce to a simmer and cook for 10 minutes. Turn off the heat, cover the pot, and let the eggs sit for another 10 minutes.
  2. Cool and Peel the Eggs
After the eggs have set, take the pot to the sink and run it under cold water, filling and draining the pot a few times. Once the eggs are cool, gently peel them.
  3. Prepare the Avocado Filling
While the eggs are cooling, chop the cilantro and cut the avocados in half. Scoop the avocado flesh into a small bowl. Add the lime juice and smoked paprika, then mash everything together with a fork until smooth.
  4. Mix in the Yolks
Slice the peeled eggs in half lengthwise and remove the yolks. Add the yolks to the avocado mixture and mix until well combined.
  5. Fill the Egg Halves
Spoon or pipe the avocado filling into the hollowed-out egg whites. For a cleaner look, use a pastry bag or zip-top bag with a corner snipped off.
  6. Garnish and Serve
Sprinkle the filled eggs with a pinch of smoked paprika and a bit of chopped cilantro. Chill until ready to serve.

Storage

  • Refrigeration: Store the assembled deviled eggs in an airtight container in the refrigerator for up to 2 days.
  • Prevent Browning: To keep the avocado filling from browning, press a piece of plastic wrap directly against the surface before storing.

Notes

My trick to perfect peeling eggs is to boil them over high heat for 10 minutes, then turn the heat off, put the lid on the pot, and allow them to sit for another 10 minutes. Then take the whole pot to the sink, run under cold water, filling the pot and dumping it a few times. This helps to cool the eggs a bit and makes them easier to peel.
