Keto Avocado Deviled Eggs

Sea Salt Savorings
Keto Avocado Deviled Eggs are a creamy, flavorful twist on the classic appetizer. This low-carb recipe replaces traditional mayonnaise with ripe avocados, making these deviled eggs both nutritious and delicious. Infused with lime juice, smoked paprika, and a hint of cilantro, they’re perfect for parties, potlucks, or even as a healthy snack.

Equipment

  • Medium pot
  • paring knife
  • Fork
  • Spoon
  • Small bowl
  • pastry bag (optional)

Ingredients

  • 6 large eggs
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • ¼ tsp smoked paprika
  • Cilantro finely chopped

Instructions

  • Add eggs to a medium pot, and fill halfway with water. Boil over high heat for 10 minutes, then turn off the heat, and cover for 10 minutes.
  • While eggs are cooling, chop the cilantro, and cut avocados in half. Use a spoon to get the avocado out of the shell, and add to a small bowl.
  • Add the lime juice and smoked paprika to the bowl, and use a fork to mash it all together.
  • After the eggs have set for 10 minutes, rinse eggs in cold water (notes above), then peel.
  • Slice eggs in half, adding the cooked yolks to the avocado mixture. Mix together.
  • Use a pastry bag or spoon to add the avocado mixture to the egg halves.
  • Sprinkle with a pinch of paprika, and chopped cilantro.
  • Chill until ready to serve.

Notes

My trick to perfect peeling eggs is to boil them over high heat for 10 minutes, then turn the heat off, put the lid on the pot, and allow them to sit for another 10 minutes. Then take the whole pot to the sink, run under cold water, filling the pot and dumping it a few times. This helps to cool the eggs a bit and makes them easier to peel.
