Rosemary Dinner Rolls with Garlic
Every year, I look forward to my husband Levi making these insanely delicious and buttery rosemary rolls. There really is nothing like warm bread fresh out of the oven.. and a good ‘ol Wyoming boy who knows how to bake. He works on them for a few hours, allowing the whole house to smell of country side French bakery. The second these babies come out of the oven, I have a buttered knife in hand and am ready to pull these flaky rolls apart!
Fresh rosemary makes it’s appearance during the festive holidays, and these rolls are a perfect excuse to go grab some out of your kitchen garden! Aromatic, fresh, herbaceous deliciousness.
If you’re like me and have ZERO self control around home made, straight out the oven, good ‘ol home cookin’ kinda carby things, these rolls are calling your name. Grab your buttered up knife and prepare for the best dinner rolls you’ve experienced.

Ingredients to make dinner rolls
- Milk
- Active yeast
- Sugar
- Water
- Egg
- Flour
- Fresh rosemary
- Garlic powder
- Salt
Tips to make these dinner rolls easier
- Use good quality and fresh yeast. Old yeast will sometimes effect bread by not allowing it to properly rise.
- Use whole milk. We don’t use extra processed milk up in here!
- Use fresh rosemary. If you cannot get your hands on some fresh rosemary, use half the amount of dried rosemary.

How to make dinner rolls
- Dust off your countertop mixer and the paddle and dough hook. Combine the warm water, sugar, and yeast. Whisk it together lightly to help the sugar dissolve using the paddle attachment. Let the yeast get all bubbly and foamy- that’s how you know it’s activated!
- Add the butter, milk, salt, rosemary, garlic powder and flour to the mixing bowl. Attached the dough hook to the mixer. Set the mixer on medium low and allow the dough to come together. Mix the dinner roll dough for 3-4 minutes until everything is incorporated. If the dough is too sticky, add 1 TBS of flour at a time. Do not over mix the dough as it will make really dense dinner rolls.
- Oil a medium sized bowl and place the dough in it. Place a damp towel or plastic wrap over the dough and let it rest and rise in a warm place for 15 minutes.
- Once the dinner roll dough has risen, punch the dough down. Break the dough into 12 equal portions. Grabbing the edges of the dough balls, tuck them underneath it to create the perfect dinner roll shape. Grease a cast iron pan and place the dough balls in it.
- Cover the cast iron pan and rolls with a damp towel or plastic wrap and allow them to rise for 45 minutes, or until the dough has doubled.
- In the mean time, preheat your oven to 350 ° F. Once the dough has doubled, make the egg wash. Crack an egg and whisk it, then brush it on top of all the dinner rolls. Place the cast iron pan in the oven and allow the rolls to bake for 25-30 minutes.
- Remove the rolls from the oven and serve with salted butter or a high quality olive oil and herb blend.

How to store these dinner rolls
If you have scarfed down enough of these scrumptious rosemary dinner rolls and still have left overs, place them in an airtight container or plastic bag. You can leave these on the counter for up to 2 days, after that they tend to mold quickly or go stale since there are zero preservatives in them.
If you want to make these ahead of time, you can freeze them in a single layer and place in an airtight container. These rolls can be be frozen for up to 6 months.
When you are ready to defrost the rolls, preheat the oven to 350 ° F. Line the rolls in a single layer on a baking dish and allow them to bake for 10-15 minutes.

Ingredients
- 1/2 cup warm water 100° F
- 2 1/2 TBS sugar
- 2 1/4 tsp active yeast
- 3/4 cup milk
- 3 TBS room temperature butter
- 3 1/2 cup flour
- 5 TBS fresh rosemary
- 1 tsp garlic powder
- 1/2 tsp salt
Instructions
- Using a KitchenAid mixer (and paddle) , combine the warm water, sugar and yeast. Whisk lightly to combine and let it rest for 5 minutes. The yeast will become foamy and bubbly.
- Remove the paddle and attach the dough hook. Add the milk, butter, rosemary, garlic powder, salt and flour to the mixing bowl. Set the mixer on medium low speed for 3-5 minutes until the dough is well combined. If the dough is too sticky, add 1 TBS of flour at a time until it forms a dough shape.
- Oil a medium sized bowl and place the dough inside of it. Drape a damp towel over the top of it or use plastic wrap. Allow the dough to rest and rise for 15 minutes.
- Punch the dough down. Oil a cast iron pan. Divide the dough into 12 equal portions. Grab the edges of the dough and stretch and tuck underneath a few times to create the perfect dinner roll shape. Place the rolls seam side down in the cast iron pan.
- Set the cast iron pan to the side and place the damp cloth or plastic wrap over it. Allow the dough to rest and rise for 45 minutes until the rolls have doubled. In the last 10 minutes, heat your oven to 350° F.
- Place the rolls in the oven uncovered for 25-30 minutes. Remove from the oven and serve with salted butter or an olive oil and herb dip. Mangia!
