Ya’ll, please don’t hate.. but I’ve had my Christmas tree up since October 1. Even waiting until October felt like serious restraint. I just LOVE the holidays.

It should come to no surprise that I will be celebrating Thanksgiving numerous times this month. With my first mock trial of Thanksgiving, I had tons of left overs!

Leftover and I do not get along. I’d prefer a fresh meal, so I usually make only as much as my family will eat. Otherwise, leftovers just sit in my fridge, uneaten and sad.

I need a gold medal for this recipe. Everyone ate leftovers! This pot pie was filled to the rim with all the classics Thanksgiving goodies like creamed corn, potato au gratin, green bean casserole, and even some random raw mushrooms I had left over.

Getting creative with the left over turkey meat is key. No one wants to just keep eating slices of turkey for days on end. Meals need to be enjoyable, not redundant! I declare fun in the kitchen! It begins with this creamy turkey pot pie.. and maybe some Christmas music blaring in the background. FA LA LA LA LA!

Let’s KISS! Keep It Simple, Stupid! Let’s explore your fridge! What left overs do you have that can combine nicely? Here’s what we used for our left over turkey pot pie:

  • Shredded turkey (both dark and white meat)
  • Green bean casserole
  • Creamed parmesan and garlic corn
  • Raw mushrooms
  • Potato au gratin
  • Pre made pie rolls

Tips to make an easy turkey pot pie

  • Use pre made pie rolls to save time. After Thanksgiving, a lot of people are maxed out for their desire to be in the kitchen. Totally understandable. Go ahead and lift that burden by using pre made pie dough rolls.
  • Use some creamy side dishes. Although you will be rebuilding a cream base for the pot pie, adding a creamy dish to contribute to the filling just adds a little something extra.
  • Use white and dark turkey meat. Everyone loves a good combination of turkey meat! This is already a dish based on mixing it up, why not add to it?

  • Anything with potatoes- even mashed potatoes! This can add a delicious, heavenly texture and flavor!
  • Green beans, carrots, sweet potatoes, etc.
  • Turkey
  • Corn
  • Stuffing
  • Gravy

How to make left over Thanksgiving turkey pot pie

  1. In a medium pot, heat butter over medium low heat. Melt the butter completely, then add the flour. Stir until the flour and butter are incorporated. Add the chicken broth.
  2. Add the left overs to the pot. Stir to combine. Let the mixture of leftovers come to a simmer.
  3. Preheat the oven to 450 ° F.
  4. Take the pre made pie dough rolls out of the fridge and let come to room temperature (10-15 minutes).
  5. In a glass pie dish, line the bottom with one of the pie rolls.
  6. Fill the pie dish with the left overs combination. Top the pie with the second pie roll.
  7. Pinch the sides of the pie dough together to seal it completely. Cut out a few slits on the top of the pie, or a shape.
  8. Bake for 25 minutes or until the pie is perfectly browned. Remove from the oven and mangia!

Ingredients
  

  • 1 package of 2 pre made pie dough rolls
  • 2 TBS butter
  • 3 TBS flour
  • 1 cup chicken broth
  • 1 1/2 cup shredded turkey
  • 2 cups Thanksgiving leftovers

Instructions
 

  • In a medium pot, melt butter over medium low heat. Add the flour and stir to combine. Add the chicken stock and let it come to a simmer.
  • Add the shredded turkey and the left overs to the pot. Allow the pot to come to a light simmer.
  • Preheat the oven to 450° F. Take the pre made pie dough rolls out of the fridge and let them come to room temperature (about 10-15 minutes).

  • In a oven safe pie dish, line the bottom of it with one of the pie rolls. Make sure the pie dough is touching the glass on all sides and is placed in the dish evenly.
  • Add the pie filling to the pie dish, and smooth it over so it is even in the dish. Add the pie roll on top of the filling. Pinch the edges of both dough layers together along the whole dish. Make small slits using a knife or fork on top of the pie for ventilation.
  • Place the pie in the oven and bake for 25 minutes or until it is nicely browned. Remove from the oven and mangia!
