Sausage Tortellini Soup

What can I say? I’m sipping soup on a hot fall day in Pensacola. This soup makes it feel like it’s actually fall, despite the scorching temperatures. Seared sweet Italian sausage greases the pan up so you can throw a blend of onion, garlic, celery, and carrots to fry up. The smell is absolutely entrancing.

The creamy tomato base is thick and perfectly balanced with an Italian spice blend. Grab a spoon and eat up, this is going to make you feel so cozy!

Did I mention how much I LOVE the smell of sauteed onions, garlic, celery, and carrots. It’s like an Italian perfume, since my hair always smells like whatever I have cooking up. HA!

I am seriously just LOVING soup lately, i cannot get enough of this Lime Soup, I even froze it so I can have individual soups when I want it! Trust me, this is the soup to go for when you are feeling under the weather!

Ingredients:

  • Onion
  • Garlic
  • Celery
  • Carrots
  • Sausage
  • Butter
  • Italian seasoning
  • Crushed tomatoes
  • Chicken broth
  • Tomato sauce
  • Heavy cream

Chefs Tips

  • Cook the sausage first. pressed for time? Use ground sausage!
  • Use the sausage grease and butter to saute the carrots, celery, onion and garlic in. All the flavors marry happily in the pan, making your home smell like heaven!
  • Use a food processor to chop the produce. This can be such a time saver! In this recipe, we want the produce to be chopped finely, so toss it in a blender to get the job done!
  • Add the tortellinis last. They can and will get soggy if they are over cooked, so if you plan on letting this soup simmer for some time, add the tortellinis very last, about 3 minutes before taking it off the stove.

How to make tortellini tomato soup

  1. Cook the sausage in a preheated pot until it is well done. Remove from the pan, and set to the side, leaving the grease in the pot.
  2. Add the butter to the pan and let it melt.
  3. Chop the onion, garlic, celery, and carrots in food processor until it is fine. Add to the pan and saute for 3 minutes.
  4. Add the crushed tomatoes, tomato sauce, chicken broth, and heavy cream. Stir in the Italian seasoning.
  5. Add the sausage back to the pot. Bring it to a boil.
  6. Add the tortellinis in the last 3 minutes of cooking.
  7. Serve with your favorite toppings like fresh oregano or parmesan cheese.

What kind of tortellinis to use

Any tortellinis will do! In this recipe, I used frozen because that’s what the store had in stock. You can use dried or even freshly made tortellinis if you’re feeling adventurous!

What kind of sausage to use

If you want to make this a quick recipe, use ground Italian sausage, as it will cook much quicker than link sausage. In this recipe, I used sweet Italian link sausage. The sweetness of the Italian sausage highlighted the tomato base perfectly. Spicy sausage will add a perfect zing to this dish if that’s what you are looking for!

Ingredients
  

  • 1 lb link Italian sausage
  • 3 TBS butter
  • 5 cloves of garlic chopped fine
  • 1 onion chopped fine
  • 2 stalks of celery diced
  • 2 carrots diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 15 oz tomato sauce
  • 28 oz can of crushed tomatoes
  • 1 tsp Italian seasoning
  • 1 lb frozen tortellini

Instructions
 

  • Cook the sausage in a preheated pot until it is well done. Remove from the pan, Slice into 1/2 inch thick medallions, and set to the side, leaving the grease in the pot.

  • Add the butter to the pan and let it melt.Chop the onion, garlic, celery, and carrots in food processor until it is fine. Add to the pan and saute for 3 minutes.
  • Add the crushed tomatoes, tomato sauce, chicken broth, and heavy cream. Stir in the Italian seasoning.Add the sausage back to the pot. Bring it to a boil.
