  • Place the chicken in 9×13 pan.
  • In a mixing bowl, stir together the brandy & vodka mixture (or substitute), white wine vinegar, lemon juice, orange extract, orange zest, stevia powder.
  • Pour the mixture over the chicken, cover with aluminum foil and bake at 350 F for 50 minutes or until the internal temperature of the chicken reaches 180 F.
  • At the end of the cooking time, remove the chicken to a foil covered plate and strain the juices in the pan into a medium-sized saucepan and heat over medium-low heat.
  • At this point, stir in the cream cheese until it is melted and evenly combined.
  • In 1/4 cup of water, whisk 2 tbsp of cornstarch to form a slurry.
  • Add the slurry to the sauce to thicken it when it comes to a boil. It is important to stir the sauce frequently to avoid burning.
  • Add salt and pepper to taste and serve the sauce over the chicken.
  • Garnish with the green onions.
