This breakfast board is effortlessly beautiful and delicious. Chorizo sausage is pan fried quickly and adds a ton of flavor to the tostadas. Then, the eggs are fried in the chorizo sausage grease.. in the great words of Guy Fieri, “We’re takin’ you on a road rockin’ trip down to Flavortown.”
The best part about this Mexican tostada breakfast board is that it is totally customizable. Add all the toppings and fixings to make it your own. A few great additions include Mexican crema, avocados, and fresh herbs.

- Refried beans

Chef’s tips
- Make the tostadas. If you cannot find pre-made tostadas, pick up a pack of corn tortillas and make your own according to instructions below.
- Use fresh corn. Boil fresh corn on the cob, then use a sharp knife to cut the corn kernels off the cob. This will create larger strips of corn that will look beautiful on the tostadas.
- Make this your own. Create a breakfast board that speaks to you and your taste buds! Add more fun ingredients like fresh herbs, salsa, avocados, olives, etc.
How to make homemade tostadas
Most grocery stores carry pre made tostadas, which are bakes or fried corn tortillas. If your store does not carry them, don’t sweat it! They are too easy to make, and taste even better when they are warm!
What you need
- Corn tortillas
- Oil or cooking spray
- Salt
- Baking sheet
Instructions
- Preheat the oven to 400 degrees.
- Spray the front and back of the corn tortilla with cooking spray or use a pastry brush to brush on the oil of your choice. Lightly sprinkle salt on them.
- Place the corn tortillas in a single layer on the baking sheet and place in the oven to cook for 5 minutes. Flip the tortillas and bake for another 5-10 minutes until they are crispy. Remove them from the oven and enjoy!
How to assemble a Mexican breakfast board
- Prepare the ingredients. First, cook the sausage in a cast iron pan. Place the whole link sausage in the pan and cook for 2 minutes on each side. Remove the sausage from the pan but leave the grease. Fry the eggs in the chorizo sausage grease. Next, cut the limes, sausage links, cilantro, tomatoes, and jalapeños to small bite-sized pieces.
- Plate the ingredients. Place the tostadas on the plate first, since they are the largest piece. Plate all the ingredients around the plate, splitting the ingredients into different piles to make them accessible from all sides of the plate. Put the refried beans, sour cream, and salsa in small serving bowls to the side or place the bowls on the plate. Serve and mangia!

- Sharp knife
- Large serving platter
- Small pot
- Large pan
Ingredients
- 10 tostadas
- 1 16 oz can refried beans
- 10 eggs fried
- 4 links chorizo sausage
- 1 can corn
- 2 roma tomatoes
- 2 jalapeños
- 2 limes sliced into wedges
- 1 bunch cilantro
- sour cream
- queso fresco cheese
Optional
- avocados
- salsa
- bell pepper
- diced green chilis
Instructions
- Prepare the ingredients. Place the link sausage in a cast iron pan over medium heat. Cook for 2 minutes per side until the sausage is cooked thoroughly. Take the sausage out of the pan and let it rest for 10 minutes. Leave the grease in the pan. Crack the eggs and fry them in the sausage grease. Place the refried beans in a small pan over medium heat and cook for 10 minutes until it is hot. Cut the cilantro, jalapeño, roma tomatoes, and limes to small bite size pieces.
- Plate the ingredients. Place the tostadas on the serving platter first, since they are the largest ingredient. Place the refried beans, sour cream, and salsa in separate small bowls. Place the bowls on the serving platter or to the side. Divide each individual ingredient into a few groups around the platter so each ingredient is accessible from all sides of the platter.
- Serve. Place a few spoons in the small serving bowls, and mangia!
