Winter citrus salad drizzled with pomegranate vinaigrette is loaded with fresh berries, blood oranges, grapefruit, peppery arugula, and purple kale. This salad is fresh, slightly sweet, tangy, and so delicious!

- 4 cups baby arugula
- 2 cups purple kale
- 1 blood orange sliced, rind removed
- 1 grapefruit sliced, rind removed
- 1/2 cup strawberries halved
- 1/4 cup blueberries
- 1/4 cup blackberries halved
- 2 tbsp pine nuts
Pomegranate vinaigrette
- 3/4 cup pomegranate juice
- 1/2 cup extra virgin olive oil
- 1/4 cup honey
- 2 tbsp white balsamic vinegar
- 1 tsp rosemary
Make the pomegranate vinaigrette. Combine the pomegranate juice, olive oil, honey, balsamic vinegar, and rosemary in a blender. Blend until it is well combined. Store in an airtight container.
Build the salad base. Add the arugula and kale to the bottom of the bowl.
Top the salad. Top the salad base with the blood orange, grapefruit, strawberries, blueberries, blackberries, and pine nuts. Drizzle with the pomegranate vinaigrette. Mangia!
