This easy 30 minute sheet pan gnocchi is combined with a fresh Caprese, roasted tomatoes, and juicy asiago spinach sausage. This is the perfect quick and easy week day dinner!

- 2 tbsp olive oil
- 1 lb gnocchi
- 2 links of Smart Chicken Organic Spinach Asiago Uncured Chicken Sausage sliced into 1/4" cuts
- 1 pt cherry tomatoes
- 1 tsp garlic salt
- 1/2 cup mozzarella balls
- 3 tbsp fresh basil chiffonade
Preheat the oven to 425 degrees. Combine the olive oil, gnocchi, sausage, tomatoes, and garlic salt in a bowl and stir to combine.
Lay the mixed ingredients on a baking sheet and roast for 10-15 minutes, until the tomatoes burst. Once the sheet pan gnocchi is done cooking, add the mozzarella pearls and fresh basil. Mangia!
