- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup vegan butter
- ¾ cup brown sugar vegan friendly
- ⅓ cup applesauce
- 3 bananas ripe; mashed
- 1 teaspoon vanilla extract
- 3 tablespoons walnuts chopped
First, preheat the oven to 350 degrees Fahrenheit. Next, spray a loaf pan with nonstick cooking spray.
In a bowl, mix the flour, baking soda, salt, and cinnamon with a wooden spoon. In a separate bowl, cream together butter and brown sugar until fluffy.
In a separate bowl, mash the bananas with a fork, then add them to the sugar mixture. Lightly mix everything together with a whisk until just combined.
Add applesauce, vanilla extract, and chopped walnuts to the banana mixture. Stir until smooth.
Combine the banana mixture with the flour mixture, then with a rubber spatula or mixer, and combine all of the ingredients until just mixed. Do not overmix the batter.
Pour the batter into the greased loaf pan, sprinkle chopped walnuts on top, then bake in the oven for 50 minutes until a knife inserted into the center of the bread comes out clean.
Remove the baked bread from the oven and allow it to rest for 10 minutes prior to slicing.
