- 1/2 cup salted butter room temperature
- 1 1/4 cup sugar divided
- 1 cup self rising flour
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 1/2 cup blackberries
- 1 tbsp lemon juice
Grease a cast iron pan or 9X9 baking dish with oil or butter. Preheat the oven to 350 degrees.
Cream the butter and 1 cup of sugar until it is light and fluffy. Add the self rising flour, egg, milk, and vanilla extract and mix until it is just combined. Add the mixture to a 9X9 baking dish or cast iron pan.
Toss the blackberries, 1/4 cup of sugar, and lemon juice together until everything is well coated.
Add the blackberries to the pan. Place the blackberry cobbler in the oven and bake for 35-45 minutes until the edges are golden brown. Mangia!
