Ingredients
  

  • 1/2 cup salted butter room temperature
  • 1 1/4 cup sugar divided
  • 1 cup self rising flour
  • 1 egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 1/2 cup blackberries
  • 1 tbsp lemon juice

Instructions
 

  • Grease a cast iron pan or 9X9 baking dish with oil or butter. Preheat the oven to 350 degrees.
    A cast iron pan is greased with a stick of butter.
  • Cream the butter and 1 cup of sugar until it is light and fluffy. Add the self rising flour, egg, milk, and vanilla extract and mix until it is just combined. Add the mixture to a 9X9 baking dish or cast iron pan.
    The cobbler batter is added to a cast iron pan.
  • Toss the blackberries, 1/4 cup of sugar, and lemon juice together until everything is well coated.
    Blackberries are tossed with sugar and lemon juice.
  • Add the blackberries to the pan. Place the blackberry cobbler in the oven and bake for 35-45 minutes until the edges are golden brown. Mangia!
    Blackberries top the cobbler in a cast iron pan before is is baked.
