Cook the chicken. Place a small pan over medium heat. Once the pan is hot, add the olive oil and coat the pan. Season the chicken with the Italian seasoning, garlic powder, red pepper flakes, and salt. Sear the chicken for 3 minutes on each side. Remove the chicken from the pan and slice it into thin strips.
Make the wrap. Lay the flour tortilla on a flat surface. Layer the spinach in the center of the tortilla. Add the chicken strips, sliced tomato, and red onion. Mix the olive oil and vinegar together, then drizzle over the center.
