  • 4 lbs chicken wings
  • 1 1/2 cup all purpose flour
  • 3 tbsp cornstarch
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tbsp lemon pepper seasoning
  • 1/4 tsp cayenne pepper
  • 3 eggs
  • 1 tbsp honey
  • 2 tbsp hot sauce

Lemon pepper sauce

  • 1/2 cup butter melted
  • 2 tsp lemon pepper seasoning
  • 1-2 tsp lemon juice
  • 1/2 tsp lemon zest
  • 1/4 tsp black pepper
  • 2 tbsp honey

Instructions

  • Make the batter. In a medium sized bow, combine the flour, cornstarch, salt, garlic, lemon pepper seasoning, and cayenne pepper. Mix to combine. In another bowl, whisk together the eggs, honey, and hot sauce.
  • Batter the chicken. Use one hand to handle the liquids and the other to handle the dry part. Use one hand to dip the chicken in the egg mixture and let the exess drip off. Toss the chicken wing into the flour. Using your other hand, toss the chicken wing thouraghly in the flour mixture. Place the chicken wings to the side as you continue to batter each one. Allow the chicken to rest for 10-15 minutes.
  • Get the frying oil ready. Fill 3 inches of frying oil in a heavy bottom pan to 350 degrees.
  • Fry the chicken wings. Use a tong to place the chicken wings in the frying oil, one at a time. Fry a few wings at a time, making sure to not overcrowd the pot. Flip the wings every few minutes to make sure they fry evenly. Cook the wings for 7-10 minutes, then plate them on a paper towel lined plate.
  • Make the lemon pepper sauce. In a bowl whisk together the butter, lemon pepper seasoning, lemon juice, lemon zest, black pepper, and honey.
  • Serve. Use a pastry brush to brush the lemon pepper sauce on the wings or toss the wings in a bowl with the sauce. Serve with garnishes like parsely, lemon wedges, or more lemon pepper seasoning. Mangia!

Notes

TO GRILL THE WINGS
Prepare your wings by sprinkling them with the lemon pepper spice blend on both sides.
Heat the grill up to 350 degrees (medium heat) and oil the grill rack.  Once the grill is nice and hot, place the wings on it.  Grill the wings for 10-15 minutes until they are cooked through.
Turn the heat up to high on the grill and let the chicken wing skin char a little for extra flavor- no more than 3-5 minutes.
Toss them in the lemon pepper butter sauce. Add a few wedges of lemon and another dash of lemon pepper seasoning and enjoy!
TO BAKE THE WINGS
First, brush your wings with 3-4 tablespoons of olive oil.  Sprinkle the lemon pepper seasoning, salt, and pepper directly on the wings (front and back).
Next, bake the wings at 425 degrees for 45 minutes, or until they reach the internal temperature of 165 degrees.
Make the lemon pepper sauce and toss the baked wings in it.  Serve and enjoy!
