Blueberry Yogurt Breakfast Popsicles

Blueberry Yogurt Breakfast Popsicles are the perfect way to bring in the warmer weather.   Frozen blueberries are reduced to a syrup, and mixed with oats, yogurt, and protein powder, providing a healthy, satisfying treat to enjoy at any time of the day!

Ingredients
  

  • 2 cups frozen blueberries
  • 2 tsp vanilla extract
  • 2 TBS raw, local honey
  • 2 cups vanilla yogurt
  • 1/4 cup rolled oats
  • 1/4 tsp cinnamon
  • 4 TBS collagen powder

Instructions
 

  • In a medium pan, heat blueberries, vanilla extract, and honey over medium heat.
  • Reduce the blueberry mixture to a syrup by cooking for about 15 minutes and stirring occasionally.  Once it has a syrup-like consistency, remove from heat.
  • In a small bowl, combine yogurt, rolled oats, cinnamon, and collagen powder.
  • Begin layering the yogurt mixture, and the blueberry mixture in the popsicle molds. Once the mixutres are used up, take a fork, and dip into the molds, gently creating swirls of colors. 
  • Place the popsicle sticks into the molds, and freeze for 2-3 hours.  Mangia!
