Winter Citrus Salad with Pomegranate Vinaigrette

Ingredients
  

  • 4 cups baby arugula
  • 2 cups purple kale
  • 1 blood orange sliced, rind removed
  • 1 grapefruit sliced, rind removed
  • 1/2 cup strawberries halved
  • 1/4 cup blueberries
  • 1/4 cup blackberries halved
  • 2 tbsp pine nuts

Pomegranate vinaigrette

  • 3/4 cup pomegranate juice
  • 1/2 cup extra virgin olive oil
  • 1/4 cup honey
  • 2 tbsp white balsamic vinegar
  • 1 tsp rosemary

Instructions
 

  • Make the pomegranate vinaigrette. Combine the pomegranate juice, olive oil, honey, balsamic vinegar, and rosemary in a blender. Blend until it is well combined. Store in an airtight container.
  • Build the salad base. Add the arugula and kale to the bottom of the bowl.
  • Top the salad. Top the salad base with the blood orange, grapefruit, strawberries, blueberries, blackberries, and pine nuts. Drizzle with the pomegranate vinaigrette. Mangia!
