Ingredients
  

  • 1/2 cup warm water 100° F
  • 2 1/2 TBS sugar
  • 2 1/4 tsp active yeast
  • 3/4 cup milk
  • 3 TBS room temperature butter
  • 3 1/2 cup flour
  • 5 TBS fresh rosemary
  • 1 tsp garlic powder
  • 1/2 tsp salt

Instructions
 

  • Using a KitchenAid mixer (and paddle) , combine the warm water, sugar and yeast. Whisk lightly to combine and let it rest for 5 minutes. The yeast will become foamy and bubbly.
  • Remove the paddle and attach the dough hook. Add the milk, butter, rosemary, garlic powder, salt and flour to the mixing bowl. Set the mixer on medium low speed for 3-5 minutes until the dough is well combined. If the dough is too sticky, add 1 TBS of flour at a time until it forms a dough shape.
  • Oil a medium sized bowl and place the dough inside of it. Drape a damp towel over the top of it or use plastic wrap. Allow the dough to rest and rise for 15 minutes.
  • Punch the dough down. Oil a cast iron pan. Divide the dough into 12 equal portions. Grab the edges of the dough and stretch and tuck underneath a few times to create the perfect dinner roll shape. Place the rolls seam side down in the cast iron pan.
  • Set the cast iron pan to the side and place the damp cloth or plastic wrap over it. Allow the dough to rest and rise for 45 minutes until the rolls have doubled. In the last 10 minutes, heat your oven to 350° F.
  • Place the rolls in the oven uncovered for 25-30 minutes. Remove from the oven and serve with salted butter or an olive oil and herb dip. Mangia!
