Creamy Sausage and Tortellini Tomato Soup

This sausage tortellini soup has a creamy tomato base, making it hearty and delicious. With Italian seasoning and the fragrant blend of roasted onions, garlic, celery, and carrots, this soup has layers of flavor!

Ingredients
  

  • 1 lb link Italian sausage
  • 3 TBS butter
  • 5 cloves of garlic chopped fine
  • 1 onion chopped fine
  • 2 stalks of celery diced
  • 2 carrots diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 15 oz tomato sauce
  • 28 oz can of crushed tomatoes
  • 1 tsp Italian seasoning
  • 1 lb frozen tortellini

Instructions
 

  • Cook the sausage in a preheated pot until it is well done. Remove from the pan, Slice into 1/2 inch thick medallions, and set to the side, leaving the grease in the pot.

  • Add the butter to the pan and let it melt.Chop the onion, garlic, celery, and carrots in food processor until it is fine. Add to the pan and saute for 3 minutes.
  • Add the crushed tomatoes, tomato sauce, chicken broth, and heavy cream. Stir in the Italian seasoning.Add the sausage back to the pot. Bring it to a boil.
  • Add the tortellinis in the last 3 minutes of cooking. Serve with your favorite toppings like fresh oregano or parmesan cheese.

Notes

  • Cook the sausage first. pressed for time? Use ground sausage!
  • Use the sausage grease and butter to saute the carrots, celery, onion and garlic in. All the flavors marry happily in the pan, making your home smell like heaven!
  • Use a food processor to chop the produce. This can be such a time saver! In this recipe, we want the produce to be chopped finely, so toss it in a blender to get the job done!
  • Add the tortellinis last. They can and will get soggy if they are over cooked, so if you plan on letting this soup simmer for some time, add the tortellinis very last, about 3 minutes before taking it off the stove.
