Paletas are Mexican popsicles, made with simple and easy to find ingredients. They start with fruit purees, then water or milk is added, and any additional add ons, then frozen. They are not made with simple syrup, corn syrup, or artificial coloring like American popsicles are. Sourcing simple ingredients for paletas is done with a sense of pride.

Mango and Tajin paleta ingredients

  • Fresh mango– Use ripened mango for this recipe to ensure the flavor is on point! If you can’t find mangos that are ripe, use frozen. Ataulfo mangos are used in this recipe because they are native to Mexico and are super sweet!
  • Water
  • Lime juice- A squeeze of lime juice will bring this recipe to life!
  • Sweetener– For a vegan rendition, use monk fruit sweetener, agave, or maple syrup. You can use honey or regular sugar to sweeten this recipe, too.
  • Tajin seasoning- This can be found at any well stocked grocery store or ordered online.

Chef’s Tips

  • Pick ripe mangos. Look for ataulfo mangos, which are young, yellow mangos. These are native to Mexico and are super juicy and sweet!
  • Use fun molds. Paletas are usually shaped like a classic popsicle, but we’re living in 2020 so I say you should make these in fun, summery molds!
  • Make them without Tajin for a kid friendly version. If you want to enjoy mango paletas without the spicy flavor, do not add the Tajin. You can add milk or almond milk instead of water to sneak in a little calcium, or add yogurt!

How to cut and dice a mango

  1. Cut the sides of the mango, avoiding the center seed (the long, flat surfaces).
  2. Slice the mango side vertically, then horizontally, creating diced pieces.
  3. Push the skin inside out, this will make the diced mango chunks easy to bite or cut off.
  4. Slice the sides off the seed. Peel the skin from the small slices. Enjoy!
