Tips and Tricks to Make Apricot Glazed Chicken Thighs
- I like using chicken thighs because they stay super moist and flavorful while still getting crispy outside. However, you could also use chicken breast or pork chops. If you want it to be bite-sized, slice the chicken or pork into nugget-sized pieces and adjust the cooking time accordingly.
- Apricot is a very underrated flavor, and it tastes excellent with the other flavors in this dish. So if you haven’t tried an apricot glaze before, I highly recommend it. If apricot isn’t your thing, try using marmalade to make an orange chicken instead.
- Many people either can’t have soy products or opt to stay away from them. If that is the case, coconut aminos are a great substitute with a similar flavor. Remember, coconut aminos are slightly sweet and less salty than soy sauce, so you might need to add extra salt to balance things out.
- The ginger and garlic add so much flavor to this dish, so don’t leave it out! Sometimes when I’m feeling lazy, I leave out garlic because I don’t want to mince it, but it is so crucial in this dish. You can even buy pre-minced or tubed garlic and ginger for convenience.
Serving Ideas and Suggestions
I love to serve these chicken thighs over fried cauliflower rice. It has all the same flavors as regular fried rice but saves 40 grams of carbs per cup! You could also serve these with some Lo Mein noodles. To make a Keto version of Lo Mein, try using Konjac noodles (aka Shirataki noodles). In a 4-ounce serving, there are only 10 calories and 3 grams of carbs.
A super easy and favorite side dish of mine is stir-fried broccoli with lots of garlic or other stir-fried vegetables such as cabbage, bok choy, bell peppers, etc. This recipe is also great paired with Grandma’s Cucumber Salad or Honey Ginger Salad.

Apricot Glazed Chicken Thighs

- Air fryer
Ingredients
- 5 Boneless skinless chicken thighs
- 1/2 cup Sugar free apricot jam
- 1 tsp. Soy sauce
- 1 tsp. Dijon mustard
- 1 tsp. Ginger paste
- 2 tsp. Minced garlic
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375 degrees.
- Season the chicken thighs with salt and pepper to taste, and put into a baking dish or tray that fits into your air fryer.
- Air fry for 10 minutes.
- While the chicken is cooking, add the remaining ingredients to a saucepan over medium heat, and simmer until well combined and thickened. Remove, and set aside.
- Remove the chicken, flip over, and air fry for another 6-8 minutes until cooked through completely.
- Brush the chicken with the glaze, and air fry another 2-3 minutes to caramelize.
