What’s on your Sunday dinner plate?!

This Cheesy Baked Tortellini with Chicken Gratinati is made with juicy seared chicken breasts and loaded with melty cheese!

This dish is quick to prepare and tastes like a big hug! I make this all the time because it’s made with such simple ingredients that you’ll never get sick of!

What you’ll need:
12 oz dried or frozen tortellini
1 tbsp olive oil
1/2 lb chicken breasts sliced in half to 1/2" thickness
3 tbsp salted butter
4 tbsp cream cheese
1 cup heavy whipping cream
2 tbsp sun dried tomatoes finely chopped
1/2 tsp garlic powder
1/8 tsp ground nutmeg
1/8 tsp red pepper flakes
3/4 cup shredded parmesan cheese
1/2 cup ricotta cheese
1 cup shredded mozzarella

Directions:
Cook the tortellini according the package instructions. Place to the side. Sear the chicken with olive oil and sprinkled with salt and pepper. Allow to rest before slicing. Preheat oven to 425, in the same pan that you cooked the chicken, combine the salted butter, cream cheese, heavy whipping cream, sun-dried tomatoes, garlic powder, nutmeg, and red pepper flakes. Bring to simmer and stir for 3 minutes. Combine everything and bake. Dollop with ricotta sprinkle with mozzarella, and bake 18-20 minutes. Mangia!

Mango and Tajin Paletas are a perfect mixture of the Mexican classic sweet and spicy flavor. These Paletas just make you wish you were walking the streets of Cancun!

Juicy, fresh mangos are puréed, then topped with spicy Tajin and frozen into these delicious paletas!

Can y’all tell that I’m SO ready for the summer? 🤩 There’s nothing like a warm, poolside day with a few of these on hand!

What you’ll need:
1 1/2 cup fresh mango skinned, cut into chunks
1/4 cup water
2 tbsp lime juice
2 tbsp sweetener (sugar, honey, maple syrup, etc.)
2 tbsp Tajin seasoning divided

Directions:
Combine mango, water, lime juice and sweetener into a blender and blend until smooth. Stir in 1 tbsp of tajin. Add a dash of tajin into the popsicle mold and pour in the mixture. Place a popsicle stick in the center and freeze for 5 hours. Mangia!

Friday means pizza! Authentic Pizza Margherita is an easy oven dish that’s delicious in its simplicity.

It’s a thin-crust pizza that’s made with traditional dough and then topped with a hearty homemade sauce, creamy mozzarella, and fresh basil from the garden!

This is seriously one of my most favorite recipes and I hope you all love it, too!

What you’ll need:
3 1/2 cups + 3 tbsp 00 flour
1 1/2 cups water
2 tsp active dry yeast
2 tsp salt
8 oz mozzarella ball sliced into 1/4 inch slices
1 cup fresh basil

Pizza Sauce:
1 28 oz can of crushed tomatoes
1 tsp basil
1 tsp garlic powder
1 tsp salt
1/4 tsp red pepper flakes

Directions:
Make the dough. Kneed for about 5 minutes or until dough bounces back. Place dough in an oiled bowl with a towel over it and allow it to rise for at least 2 hours. Combine sauce ingredients in a pan and let simmer for 10 minutes. Shape the dough. Preheat oven to 500 and divide dough into 3 balls. Stretch and punch the dough. Top with sauce, mozzarella, and fresh basil. Cook the pizza for 5 minutes, then broil for another 3-5 minutes. Remove the pizza and repeat! Mangia!

We’re expecting rain for these next few days and all I can think about is this incredibly delicious and hearty Gnocchi Beef Stew!

It’s comfort food to the MAX. Loaded with carrots, potatoes, celery, and pillowy Italian gnocchi, this soup is packed with all of the flavor! This dish is definitely a treat and all I want to do is curl up with a good book, eat some soup, and listen to the rain!

What you’ll need:
2 tbsp olive oil
1 lb beef chunks cut into 1/2" cubes
3 tbsp salted butter
1 white onion finely chopped
4 cloves of garlic finely chopped
1 1/2 cup baby carrots
1 stalk of celery chopped
1/3 cup all purpose flour
1/2 cup dry red wine
5 cups beef stock
1 cup potato diced
1 cup frozen peas
1 tbsp fresh thyme or 1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
1 bay leaf
16 oz gnocchi

Directions:
Sear the beef in a Dutch oven over medium heat with olive oil. Set aside. Add butter to the pot and wait for it to melt. Add onion, garlic, carrots, and celery, and sautè for 2-3 minutes then add flour to coat the vegetables. Pour the red wine into it pot and allow it to cook for 2 minutes. Add the rest of the ingredients and simmer for 10 minutes to 1 hour. Add gnocchi in the last 5 minutes of cook time and boil according to package instructions. Serve immediately. Mangia!

Creamy Greek yogurt, whipped topping, and funfetti cake mix all combined makes for a quick snack and a fun treat!

P.S. this dip makes animal crackers EXTRA dunkable😍

What you’ll need:
8 oz whipped topping
1 cup vanilla Greek yogurt
1 cup funfettti cake mix
2 tbsp sprinkles

Directions:
Combine whipped topping and Greek yogurt in a bowl until combined. Add the flower to the bowl, mix on low until fluffy. Top with sprinkles and enjoy with your favorite cookies! Mangia!

These Italian sausage and shrimp kabobs are so easy to make and grilled to perfection! This is one of my favorite barbecue recipes because it just gives off such a good flava’!

There’s absolutely nothing like sitting out on the deck and enjoying the sun while munching on these kabobs! If your family is anything like mine, they’re going to devour these in seconds!

What you’ll need:
1 lb link Italian sausage
1 lb peeled and deveined large shrimp
3 tbsp butter
1 tsp Italian seasoning
1/2 tsp garlic powder

Directions:
Cook sausage in a pan over medium heat and slice into 1 inch pieces. Assemble the kabobs with cooked sausage and shrimp. Combine butter with Italian seasoning and garlic powder and brush mixture onto kabobs. Grill for 2-3 minutes on each side or until shrimp is pink and opaque. Remove from the grill and serve. Mangia!

Tons of vegetables tossed in a tangy sweet stir fry sauce over rice creates a satisfying meal that is loaded with flavor!

It’s easy, quick, and a perfect meal for a meal prep! It comes together beautifully and you won’t be able to stop making it!

What you’ll need:
1 tbsp sesame seed oil
1 15 oz can baby corn drained
1 8 oz can water chestnuts drained
1 1/2 cup broccoli florets
1 cup baby bella mushrooms sliced
1 carrot sliced
1/2 yellow bell pepper sliced
1/2 red bell pepper

Stir fry sauce:
1/2 cup vegetable broth
1/4 cup soy sauce
2 tbsp brown sugar
1 tbsp apple cider vinegar
3 garlic cloves finely chopped
1/4 tsp red pepper flakes
1 tbsp cornstarch

Optional:
1 cup white rice

Directions:
Cook the rice according the package cooking instructions. Cook the vegetables. Heat sesame seed oil over medium high and cook vegetables for 5-7 minutes. Add stir fry sauce and coat the vegetables. Remove from pan and serve. Mangia!
